January 11th, I Love You!!!

Merry belated Christmas!
I'm still drinking the most delicious eggnog.
(Shary asked me the other day to imagine what an eggnogaholic would look like. This made me laugh like an idiot)

Happy Year of the Rat

eggnog
Makes about 6 cups.

Ingredients
3 cups whole milk
7 large eggs
1/4 cup sugar
2 cups heavy cream
1/3 cup bourbon
1/3 cup Cognac or other brandy
1 teaspoon vanilla
1 tsp fresh grated nutmeg and more for garnish

Preparation
Bring milk just to a boil in a 2-quart heavy saucepan. Whisk together eggs and sugar in a large bowl, then add hot milk in a slow stream, whisking. Pour mixture into saucepan and cook over moderately low heat, stirring constantly with a wooden spoon, until mixture registers 170°F on thermometer, 6 to 7 minutes.

Pour custard into cleaned large bowl and stir in cream, bourbon, brandy, vanilla and 1 tsp nutmeg.
Blending with a hand blender or standing blender for 1 or 2 minutes helps smooth any egg curdling though the constant stirring w/ a wooden spoon while cooking should prevent this. The custard should have a smooth, velvety texture.
Cool completely, uncovered, then chill, covered, until cold, at least 3 hours and up to 24.
